Vanilla Cupcakes



I'm new to this blogging but want to show you all that it can be done.
I've started cooking with enthusiasm lately after reading and seeing what others are making.
This is my first attempt at Cupcakes and iced them to show off abit.
My recipe was from Nigella so here goes my first recipe blog


VANILLA CUPCAKES

Ingredients
  • 125g self-raising flour
  • 125g caster sugar
  • 125g soft unsalted butter
  • 2 eggs
  • Half a teaspoon real vanilla extract
  • Approximately 2 tablespoons milk
Method

Makes 12 line 12 muffin tin tray with your nicest papers.
Preheat oven to 200C.
Put all ingredients in a food processor except the milk.
Mix till smooth. Pulse while adding milk if using the processor till its a smooth dropping consistency.
If using a bowl cream the butter and sugar beat in the eggs one at a time with a little flour.  Then add the vanilla extract and the rest of the flour.
Put in the muffin tins equally and cook for 15-20 minutes.
Cool on a wire rack and remove the cases when cool enough from the tin.

Icing


100gm butter
3 cups Icing sugar
1/4 cup milk
Use an electric mixer to beat the butter until very pale. Gradually add the icing sugar while beating.  Add the milk and beat until well combined.
Decorate cupcakes with sprinkles or flowers.

Well how easy was that they tasted great I ate 2 I think and shared the rest with the family which is the best part.  Think this could be the start of my cupcake experience.
